Recipe Group / "Healthy Granola Cookies"

These cookies were amazing!!


Andrea made three different varieties of cookies from the same basic Granola Cookie recipe.



She put applesauce and cinnamon chips in one batch,
banana's and walnuts in one batch 
and the favorite batch had raspberries and 
chocolate chips!

She said you can really put anything you have 
and like in them.

Granola Cookies 
(Note: these have no eggs or oil.)

Mix: 
1 cup turbinado raw sugar (regular granulated sugar works fine)
1 cup brown sugar
1 cup applesauce or fruit puree

Add then mix:
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla

Add these ingredients slowly, to make sure it is the consistency you like:
2 cups wheat flour (Andrea used part wheat and part white)
2-3 cups oats (ready or quick)

Add:
chocolate chips, raisins, craisins, nuts, etc. as you desire.

Bake at 375 degrees for 13-15 minutes. The cookies do not spread out while baking so flatten a little if desired.
*They are not as good too soft or too hard. They will harden a bit after taking them out of the oven.
